Apple Endive Salad with Grapes
1/4 c reduced fat sour cream
1/4 c low-fat buttermilk
2 tbsp cider vinegar
salt and pepper to taste
2 apples (any kind), cored and thinly sliced into 1 inch slices
1.5-2 lbs. endives (4-6), halved lengthwise, trimmed, and cut crosswise into 1 inch pieces
2 c seedless green or red grapes, halved lengthwise
1/2 c chopped pecans or walnuts, toasted and crushed slightly
8 oz. goat cheese, sliced into 8 slices.
1. In large bowl, whisk together sour cream, buttermilk, and vinegar; season with salt and pepper.
2. Roll each slice of cheese into a ball and roll into crushed nuts.
3. Add apple slices to bowl along with endives and grapes. Toss to combine.
4. Serve with goat cheese balls on the side.
